burrata with pesto and veggies
I am head over heels in love with this burrata appetizer dish which is always a hit! It's so filling and satisfying, you won’t even need dinner afterwards.This is the ultimate burrata appetizer, pesto and veggie tray!
2 large burrata balls
2 ripe avocados
1 lb asparagus, trimmed
1 cup walnuts, halved
2-3 cup assorted heirloom organic cherry tomatoes, halved
4 tbsp pesto (either homemade or store bought freshly made)
1 pinch high quality salt
Bring a large pot of water to a boil. Add asparagus to boiling water and allow to cook until tender crisp, about 4-5 minutes. Remove and let cool for a few minutes.
Assemble on a tray along with burrata, tomatoes, avocados and walnuts. Place a dollop of pesto over each burrata ball.
You may substitute balsamic vinegar reduction for the pesto. Any nuts will work and sometimes I add sunflower or pumpkin seeds.
