With nothing more than shredded cheese, a little garlic, and a hot skillet, you'll end up with delicate, lacy crisps that look like they came from a fancy wine bar. Italians call them frico. I'm giving them a little Spanish twist with nutty Manchego cheese because, honestly, Manchego makes almost everything better.

They're perfect with cocktails, on top of tomato soup, crumbled over a salad, or you can do what I can't help doing, eating them straight off the cooling rack.
