Adding mango to any recipe can make things as sweet as if you added honey to it. Of course that's only if mango season is at its peak and your mango is perfectly ripe. You always have the option of buying the frozen variety.

Ingredients

2 lbs chicken thighs, cut into even pieces
½ cup extra virgin olive oil
1 garlic bulb, peeled and separated
high quality salt
fresh ground pepper
large ripe mango, peeled and cubed
1 tbsp smoked garlic powder
1 tbsp paprika

Directions

In a large bowl mix olive oil with all the spices. Add the chicken thighs making sure they’re fully drenched in the mixture. Remove the chicken pieces from the bowl and place in a large cast iron skillet, one piece at a time. Leave what’s left of the mixture in the bowl.
Cook on medium high until the chicken is golden brown on the bottom, about 4-5 minutes.
While the chicken is cooking add the cubed mango pieces to the bowl with the leftover marinade and stir. Add the garlic cloves.
Turn each piece of chicken and then add the mango and garlic marinade combo all over the top of the chicken. Cook for another 5 minutes or until golden crispy. Lower the heat and leave on the skillet for another 5 minutes. Serve immediately.
