Ingredients

6 ripe peaches, pits removed and cut into small pieces
3 tablespoons fresh lime juice
1 medium shallot, minced

Directions

In a medium bowl, combine peaches, lime juice, shallot, red onion, jalapeño, red peppersand cilantro, all chopped up small.
Toss gently so everything is coated with the lime juice and mingling in juice from the peaches. Season with sea salt and black pepper to taste.
Chill for 10–15 minutes to let the flavors make friends.
Serve with chips, spoon over grilled fish or chicken, or eat straight with a spoon when no one’s looking.
