It’s my obsession. Avocado toast (extra crispy always) with a poached egg on top. This simple recipe is delicious and the dish is satisfying to eat for breakfast lunch or even as a light dinner.

You only need 3 ingredients and some spices for this simple but tasty dish. If you prefer your egg fried instead of poached you'll need a little butter or olive oil. I prefer mine on sourdough bread but any bread will do.

Ingredients

toasted bread slice
ripe avocado
poached egg
kosher salt
fresh ground pepper
red pepper flakes

Directions

Simply toast your bread. Next, smash an avocado in a small bowl with a fork. Sprinkle with salt and pepper to taste. Spread the avocado mixture over the toast.
Take the poached egg and place over the avocado and spread with a fork. Sprinkle the egg with salt as needed and serve! Garnish with red pepper flakes
