Directions
Make the marinade.
In a bowl, whisk together garlic powder, cumin, oregano, salt, pepper, orange juice, lime juice, and olive oil.
Coat the chicken.
Arrange drumsticks in a baking dish and pour the marinade over them, turning to coat well.
Add the mango magic.
Brush mango jam generously over each drumstick.
Cover and roast.
Cover loosely with foil and bake at 375°F for about 50 minutes, turning once halfway through.
Uncover + broil.
Remove foil and broil for 3–5 minutes until the skin is caramelized and lightly crisp.
Rest and serve.
Let rest for a few minutes, then serve over rice or your favorite grain—don’t forget the juices.

If your mango jam is thick, warm it for a few seconds so it brushes on smoothly. For extra depth, add a pinch of chili flakes to the jam before brushing—it won’t make it spicy, just more interesting.
