turkey leftovers sandwich
I don’t know why it took me so long but this is the year I discovered the turkey leftovers sandwich. I'm already looking forward to next Thanksgiving just so I can make this sandwich over and over again for a whole week!
I’ve done many things with turkey leftovers but because I usually try to avoid bread it never occurs to me to eat a turkey sandwich. But after making this recipe, I don’t think I’ll ever go back!

It could be because of the crusty bread. I won’t lie – I went to a great bakery and found the crustiest sourdough bread. I wanted it to photograph well, but I never imagined how deliciously important this single ingredient is.

You really don’t need many ingredients to make this sandwich. Of course you do need the crusty bread plus leftover cranberry sauce, mayo, onion and arugula. But truly the secret sauce of this sandwich is triple cream brie cheese.

If you let the cheese sit out at room temperature it is already super creamy. But slather it on to the warm toasted bread and it literally melts.

Now it’s time to assemble. I provide instructions below but you can do this any way you want.

Whatever you do, be sure to take a picture of it because it will be beautiful and you'll want to remember it!

There are no exact measurements for this recipe. Everyone likes their sandwiches a certain way. Just pile on what you like and what you have leftover.I always saute the turkey with a little olive oil for a couple of minutes to warm it up before putting it on the sandwich. The onions are best when sliced very thin so they add just enough flavor but don’t overpower. And when I say triple cheese brie, I mean triple cheese brie. Don't substitute. It will melt in your mouth and I believe it’s the secret ingredient that makes this sandwich so amazing!

Ingredients
- turkey slices
- triple cream brie (room temperature)
- mayonnaise
- arugula
- cranberry sauce
- 2 slices of crusty sourdough bread
Directions
Before you build your sandwich, toast the bread.
Slather mayo on both slices. Spread cranberry sauce on one side. Lay the onions over the sauce. Put the turkey on the cranberry side. Add arugula leaves over the turkey. Place a slice of the brie on the other side. It will melt over the toasted bread. Put both pieces of bread together and you’re done!

Hi Maryanne
I made your turkey for thanksgiving this year. All I can say is “unbelievable”!!! I brined it in salt water for 2 days because I had the time and prepared it and cooked it just like you said. I used my oven. It was very flavorful and tasty. Its a keeper. Thanks for sharing.

Love the recipe. I swap out the soft cheese for pepper Jack cheese and use Whole Foods’ cranberry walnut bread. Mmmmm

Great recipe! I make something similar. I use pepper Jack cheese rather than the soft cheese and whole foods cranberry walnut bread! Yum!

Can’t wait to try this, I didn’t have any leftover turkey, I was a guest not the host.
Might have to buy a small turkey breast!
