When the temperature begins to drop, the body, the mind and the soul start to crave that feeling of well-being.
Something that reminds us of our childhood, of home cooked meals.
Usually this means high sugar or high carbs.
This might be why all I can think about lately is a bowl of mashed potatoes.
But I’m living a KETO lifestyle… so of course, these are NOT your typical high carb mashies!
Mamma mia… here I go again with the cauliflower!
All you need is a beauty like this one and a few other ingredients you probably already have in the house.
Healthy cauliflower mashed potatoes are the perfect low carb alternative to regular mashed potatoes.
The whole thing takes about 15 minutes.
All you do is separate the florets and put them in a food processor or mash them with a potato ricer.
Throw them into a pot of boiling water. I love using a pasta cooker with a steamer insert to easily remove the florets.
Place the florets into a food processor with the cheese, garlic and yogurt.
Pulse a few times till smooth.
Make sure it’s cheesy, buttery, garlicky and salty enough and then… FUGGEDABOUTIT!
These ingredients create the magic. I promise you’ll be cooking this up for yourself and your guests.
Drizzle with olive oil and garnish with parsley… and DEVOUR!
