Back in the day my aunt, tia Mimima, used to make this dish in Havana and called it Cuban guacamole. I've never had guacamole like this with the added pineapple or with avocado cut up in chunks, not mashed. But whatever you call it, I guarantee it will become a favorite in your home.

Name: cuban style avocado pineapple salad
Ingredients: 4-6 large whole leaves of buttery lettuce; 1 large or 2 small chopped avocado; ½ cup finely chopped red organic onions; ½ cup natural pineapple chunks; 2 tbsp of juice (from the pineapple container); 1 tbsp chopped cilantro; 1 tbsp fresh squeezed lemon juice; 1 tbsp extra-virgin olive oil; salt and pepper to taste

Of course this recipe is best when the pineapple is extra sweet and the avocado is perfectly ripened. Serve it on a bed of beautiful lettuce.

Ingredients

4-6 large whole leaves of buttery lettuce

2 tbsp of juice (from the pineapple container)

Directions

On a serving salad dish spread out the lettuce leaves and lay as a bed. Place the avocado, onions and pineapple chunks over the bed of lettuce.
Drizzle with olive oil, lemon and pineapple juice to taste. Add salt and pepper. Top with cilantro and serve.
