This is a super popular street food that's flavor packed and easy to make. There are so many variations. Basically it is grilled corn covered in everything you love.

Ingredients: 4 ears of grilled corn on the cob; ¼ cup mayonnaise, sour cream or a combo; 2 tsp lime juice; 1 tsp chili, ancho or chipotle powder; sprinkle of cayenne pepper; ½ tsp of high quality salt; 3 tbsp chopped cilantro; ½ cup cotija cheese, finely grated

This is authentic Mexican street food that can vary in how it's served. You can scrape the kernels off and top off with the tangy and creamy mixture or eat it right off the cob as in this recipe. If you can't grill the corn, boiling it works too. You can serve as a snack, an appetizer or as a side dish.

Ingredients

4 ears of grilled corn on the cob
¼ cup mayonnaise, sour cream or a combo
2 tsp lime juice
1 tsp chili, ancho or chipotle powder
sprinkle of cayenne pepper
½ tsp of high quality salt
3 tbsp chopped cilantro
½ cup cotija cheese, finely grated

Directions

While the corn is grilling, prepare the blend. In a bowl combine the mayo, lime juice, chili powder, salt and if you’re using cayenne mix it in as well. Stir until it’s all combined.
In another bowl mix the cheese and cilantro. When the corn is ready brush the mayo mixture over the ears of corn. Then sprinkle the cheese and cilantro mixture over them. Sprinkle some leftover chili powder over the corn and serve right away.

Recipe Note

Optional: Of course, if you don't like cilantro just omit!
