Olive oil, bacon drippings and shallots make these fresh green beans almost perfect until you add the crumbled bacon over the top, resulting in an unrivaled dish!
Ingredients
½ lbs fresh green beans, trimmed
1 lb bacon sliced, roughly chopped
3 tbsp olive oil
4 large shallots finely chopped
salt and pepper to taste
Directions
In a large cast iron skillet, slowly cook bacon over medium heat until crispy, 20-25 minutes. Remove the bacon and place on a plate lined with a paper towel to drain.
Add the shallots to the bacon fat and cook on medium heat until tender, about 3 minutes. Sprinkle with salt and pepper.
Turn the heat up to medium high and add the green beans, constantly moving them around for even cooking for approximately 10 minutes.
Remove the beans from the pot and place in a casserole dish and top with the bacon pieces.
