- Mix the Seasonings
In a small bowl, combine chili powder, smoked paprika, cayenne, and a pinch of salt. Adjust heat to your comfort level.
Sauté the Flavor Base Heat a skillet with olive oil or butter. Add onion, garlic, and jalapeños. Cook until soft and fragrant—this mellows the heat and builds flavor.
Add the Corn Stir in the corn and cook just 1–2 minutes. You’re waking it up, not cooking it through.
Make It Creamy Remove from heat. Stir in yogurt/sour cream, mayo, lime juice, a couple teaspoons of the seasoning mix, and a generous handful of cheese. Mix until smooth and irresistible.
Bake Top with remaining cheese. Bake at 400°F for 15–20 minutes, until bubbly, golden, and smelling like trouble.
The Finish (Don’t Skip This) As soon as the dip comes out of the oven: Shower it with crispy bacon. Drizzle generously with honey. Sprinkle on remaining seasoning. Add diced avocado. Finish with cilantro, lime, and flaky salt.
The Finish (part 2) In a separate pan, fry two eggs until the whites are set and the yolks are still runny. Slide them right on top of the dip. Break the yolks. Stir slightly. Watch people lose composure.
