Super bowl will be a little different this year. No gatherings or mixing with people outside our "bubble." But who's to say we shouldn't have some good snacks to go along with the game, no matter how small the party?
I love making these shrimp boats because I feel good even after having a few extras since they're so healthy.

This is super easy to make. The biggest challenge might be finding fresh mango. If you can’t find it fresh, look for the frozen pulp and thaw for a few minutes before chopping.
1/2 pound steamed shrimp
1 cup chopped cucumber (english, seeded)
1/2 cup chopped fresh mango
1/2 cup chopped fresh pineapple
2 tbsp chopped fresh cilantro
1/2 cup minced red onion
2 tbsp lime juice
1 tbsp seasoned rice vinegar
1 tsp freshly grated ginger
salt and pepper
3 heads belgian endive
Mix all ingredients and spoon into endive leaves for serving. Garnish with cilantro sprigs.
