Bonus Tip:

Toast your pistachios lightly in a dry skillet before adding them. It brings out their natural sweetness and makes the salad taste even more luxurious.

Ingredients

2 cups fresh cherries, pitted (halved if you’ve got a cherry pitter!)
8 oz burrata cheese
2 tbsp extra virgin olive oil (use the best you’ve got)
1 tbsp aged balsamic vinegar (fig balsamic if you have it)
kosher salt, to taste
freshly cracked black pepper, to taste
¼ cup fresh basil leaves, chopped or torn
¼ cup fresh mint leaves, chopped or torn
⅓ cup shelled pistachios

Directions

Pit the cherries (warning: it gets messy, but so worth it). Halve them if you can.
Place the burrata in a shallow bowl or serving platter and gently break it open, spreading it out slightly.
Scatter the cherries over the burrata.
Drizzle generously with olive oil, followed by the balsamic vinegar.
Season with a pinch of kosher salt and freshly cracked black pepper.
Sprinkle the chopped basil and mint over the top.
Finish with a good handful of pistachios for crunch.
Serve immediately with crusty bread on the side if you like.
