This has got to be one of the easiest and most versatile “pizzas” I’ve ever made. It can be a meal, or a fruity appetizer. Ingredients are optional. Sometimes I add thinly sliced red onion or toasted pecans. Whatever you’re in the mood to eat. It’s perfect to throw on the grill on a hot summer night!
Ingredients
2 tsp extra-virgin olive oil
1/4 tsp kosher salt
1 (3/4-inch-thick) slice seedless watermelon
2 oz thinly sliced serrano ham (or your favorite baked ham)
Combine olive oil and salt in a medium bowl. Brush olive oil mixture onto both sides of watermelon slice.
Grill watermelon 3 to 4 minutes on each side, until well marked and juicy. Place it on a serving platter. Top watermelon evenly with ham, cheese, (onions or nuts if you like). Sprinkle with basil, Drizzle with vinegar & cut into 8 wedges.
