Cauliflower rice is a healthy alternative to white or brown rice or any other grain. It's as simple and diverse as making fried rice, with raw cauliflower as the base. It's delicious and easy to make in a big batch and add to your meals all week long.

Cauliflower rice is one of the most diverse ingredients for recipes. You can buy it fresh or frozen, which will last in the freezer much longer. You can make it with anything available to you in the fridge. Here’s one way to make this tasty dish.
½ to 1 cup of pecans
2 tbsp coconut oil
3 garlic cloves, chopped
1 leek, sliced and chopped
1 tsp turmeric powder
½ tsp salt
½ tsp black pepper
1 lb bag of cauliflower rice, fresh or frozen
Toast the pecans in a large skillet over medium heat stirring frequently making sure not to burn them, about 3 to 5 minutes. Transfer them to a bowl to cool.
Return the skillet to the heat and add coconut oil and garlic. Cook while stirring until the garlic is fragrant, about one minute, and add the leek.
Saute for 5 minutes, stirring as needed, but not too much. Then add turmeric, salt and black pepper. Stir in the cauliflower rice and combine. Cook, stirring every minute or so until the cauliflower is hot and turning golden in some places, for about 10 minutes. (If the cauliflower is frozen count on adding 10 minutes of cook time to the recipe.)
Remove the skillet from the heat. Add the toasted pecans and season to taste with more salt and/or pepper.
