I grew up having Cuban split pea soup, sopa de chicharo, at least once a week. It's my ultimate comfort food. I’ve experimented with different recipes. When I’m not using ham, bacon, chorizo or any other meat products and still want the soup to explode with taste, I go for this delicate and flavorful recipe.

Ingredients: 1 lb yellow split peas, picked over; 2 cups calabaza (or butternut squash); 1 yellow onion, finely chopped; 1 large leek (white and pale green parts only), chopped and rinsed; 1 shallot head, finely chopped; 1 celery stalk, chopped; 1-2 medium to large carrots, chopped; 6 garlic cloves; 1 tbsp Himalayan salt; 1 tbsp turmeric; 1 tsp cumin; several threads of saffron; creme fraiche, small container

This is easy to prepare, naturally gluten-free, vegan, versatile, beautiful, very yellow and loaded with protein! It freezes beautifully so you can enjoy it at a later time.

Ingredients

1 lb yellow split peas, picked over
2 cups calabaza (or butternut squash)
1 yellow onion, finely chopped
1 large leek (white and pale green parts only), chopped and rinsed
1 shallot head, finely chopped
1 celery stalk, chopped
1-2 medium to large carrots, chopped
6 garlic cloves
1 tbsp Himalayan salt
1 tbsp turmeric
1 tsp cumin
several threads of saffron
creme fraiche, small container

Directions

Rinse the peas and combine in a 6 to 8-quart heavy pot with water, calabaza, onions, leek, shallots, celery, carrots and garlic. Bring to a boil, skim the froth, and reduce the heat. Add seasonings. Simmer covered for 2 hours. Stir occasionally and add water to thin it out, if necessary.
Top with creme fraiche and serve along with a crusty french bread.
