Now that it’s spring I’ve been obsessed about working mint into my dishes. Here’s a delish combo of cilantro, mint and a few of my other favorite ingredients.

Ingredients: 2 cups fresh cilantro leaves; 2 cups fresh mint leaves; 1 cup parsley; 3 cloves of garlic; ½ jalapeño pepper, seeded and sliced; ⅓ cup freshly squeezed lemon juice; ¼ cup extra virgin olive oil; 1 tsp of salt; ½ tsp of black pepper

This sauce works well with chicken, lamb or fish, or even splashing it on a taco!

Ingredients

2 cups fresh cilantro leaves
2 cups fresh mint leaves
1 cup parsley
3 cloves of garlic
½ jalapeño pepper, seeded and sliced
⅓ cup freshly squeezed lemon juice
¼ cup extra virgin olive oil
1 tsp of salt
½ tsp of black pepper

Directions

Combine the cilantro, mint and parsley leaves, garlic, jalapeno pepper, lemon juice, salt and pepper in a food processor and pulse until the mixture forms into a smooth paste.
Slowly drizzle the oil through the processor’s feed tube while it’s running and allow the mixture to blend until it is smooth and creamy. If it’s too thick you can add a tablespoon or two of water. Make sure the mixture has texture.
This is best when consumed within 3 hours.
