- Make the Dough:
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy. In a large bowl, mix the flour and salt. Add the yeast mixture and olive oil.Knead the dough on a lightly floured surface until smooth and elastic (about 5–7 minutes). For gluten-free dough, follow your flour blend’s instructions for best results. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm spot for about 1 hour or until doubled in size.
Preheat the Oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
Shape the Pizza: On a lightly floured surface, roll out the dough into a thin, 12-inch round. Transfer it to a parchment-lined baking sheet or a preheated pizza stone.
Assemble the Toppings: Optional Sauce: Spread a thin layer of pizza sauce over the dough, or simply brush the crust lightly with olive oil.In a bowl, toss the sliced mushrooms with minced garlic, 1 tbsp olive oil, a pinch of salt, and pepper. Evenly spread the mushrooms over the crust.Sprinkle the grated Gruyere (and mozzarella, if using) evenly over the mushrooms.Scatter the chopped fresh herbs over the cheese.
Bake in the preheated oven for 10-12 minutes, or until the crust is crispy and the cheese is bubbly and slightly golden.
Finish and Serve: Remove the pizza from the oven, drizzle with a little extra olive oil if desired, and garnish with a few more fresh herbs. Let it cool for a couple of minutes before slicing. Serve warm and enjoy!
