Let's be honest. You can never go wrong with potatoes of any kind. These roasted sweet potato wedges are the perfect side or snack. They have just as much flavor as the deep fried variety but they're way more healthy!
Preheat oven to 400 degrees. Use aluminum foil or parchment paper to line a large pan or baking sheet and set aside.
Cut the potatoes into long wedges-- roughly 8 even wedges per potato. Place them in a bowl and set aside.
In a small mixing bowl, whisk together the oil, garlic, salt, paprika and pepper. Pour the mixture over the potatoes and toss until they're evenly coated.
On the baking sheet or pan arrange the seasoned potatoes with skin side down. Place the loaded tray in the oven and bake for about 35 minutes. When they're crisped and soft when poked with a fork, remove from the oven. Serve immediately!
