This is a super easy to make and delicious marinating sauce that you can always keep in your fridge because you'll always find a use for it. If you use fresh mangoes, make sure they're ripe. If you can't find them fresh because they're out of season, look for the frozen pulp in your local grocery store.

Ingredients: 1 head of garlic, peeled and separated; ½ tsp salt; ½ tsp cumin seeds; ½ tsp peppercorns; ⅓ cup extra virgin olive oil; ⅔ cup fresh lime juice; 1 cup chopped mango

This mixture of garlic and lime combined with the sweetness of the mango is a perfect combination of flavors. Use it to marinade chicken, fish, pork and beef. Save some for the end of your recipe and drizzle over your favorite dish.

Ingredients

1 head of garlic, peeled and separated
½ tsp salt
½ tsp cumin seeds
½ tsp peppercorns
⅓ cup extra virgin olive oil
⅔ cup fresh lime juice
1 cup chopped mango

Directions

In a food processor combine garlic, salt, cumin seeds and peppercorns and pulse until finely chopped. Add lime juice to the mixture and then olive oil as you continue to pulse. Taste and add more salt if necessary. Remove the mixture and place in a bowl. Add the chopped mango and stir.
Use this to marinade meat, chicken, fish, pork, beef, meat substitutes or vegetables.
